#101 Nitro-Fermented Wash-Processed Coffee Beans from Colombia

Pair Cupworks

About This Coffee

This coffee is from Finca Milan in the Pereira region of Risaralda, Colombia, grown at 1650 meters above sea level. Produced by Julio Cesar Madrid Tisnes, a third-generation coffee grower whose family has owned the 250-hectare estate for over 40 years. The Caturra varietal is processed using a Culturing Nitro Fermentation Washed method, which involves embryonic stress, bioreactor fermentation with starter cultures and nitrogen injection, with close monitoring of temperature, acidity, and Brix degrees. The coffee is dried in solar dryers to 40% moisture then mechanically dried to 10-12% moisture, followed by a 45-day resting period. The flavor profile features clean, crisp sucrose sweetness and fragrant melon notes.
