#106 96-hour Fermentation Geisha Coffee Beans from Colombia

Pair Cupworks

About This Coffee

This Geisha coffee is from the Ciudad Bolivar region in Antioquia, Colombia, grown at Finca La Reserva at altitudes between 1900-2000 meters. The coffee undergoes a unique 96-hour anaerobic honey process where ripe cherries are depulped with some mucilage left intact, then fermented anaerobically in hermetically sealed 200-liter tanks for 96 hours before being fully sun dried. The harvest occurs from October to December. This processing method creates a coffee with floral hibiscus and pomegranate notes, offering bright flavor with more cleanness than typical anaerobic processing while retaining fruitiness and sweetness.
