This decaf coffee is from Popayán in the Cauca region of Colombia. It is a washed processed coffee featuring the Castillo variety. The decaffeination process uses ethyl acetate derived from sugar cane, extracted from a nearby sugarcane mill, which maintains the original flavor of the origin and terroir while producing a very clean cup. The washed processing lends to a sweet, fruit-forward profile with flavor notes of brown sugar, berries, and tobacco.
Phil Goodlaxson founded Corvus Coffee Roasters in 2010 in Denver, Colorado, starting with a small roaster in his garage before scaling up. The roastery now operates multiple retail locations across the Denver metro area and roasts well over 100,000 pounds of coffee annually. Corvus prioritizes direct trade relationships with farmers, many spanning over a decade, and holds more Cup of Excellence coffees and microlots than any other roaster in the Denver area.
