About This Coffee

This coffee originates from the Simbai Region of Papua New Guinea, grown at 1600-1900 meters above sea level by various smallholder farmers. The varieties are Bourbon and Typica, processed using the washed method. The micro-lot is named Papua New Guinea Simbai Balus Kopi AX 2023, harvested between April and July. Many smallholders process their cherry at home with hand-powered pulpers, fermenting the beans for around 36 hours before washing off the mucilage and setting them out to dry. The coffee features flavor notes of dried cherry, pecan, and dark chocolate, with a well-balanced profile, moderate acidity, and full-bodied, buttery quality.

Food & Wine Magazine named them Best Coffee Roaster in the state in 2022. They roast in small batches with the goal of developing clean flavours that respect the work of farmers and producers.
