It is a Caturra variety processed using an anaerobic washed method, where cherries are fermented in fruit for 48 to 72 hours before depulping, followed by a secondary stage. This process preserves a clean structure while developing layered sweetness and complexity. The flavor profile features notes of vanilla, wildflower honey, caramel, and crisp green apple.
