This decaffeinated coffee is sourced from producers in the Sueños se Semilla project in Honduras, specifically from the Comayagua and El Paraiso regions. The coffee is grown at altitudes between 1800-2100 meters above sea level. It uses fresh crop beans processed through washed decaffeination using the EA method, with the green coffee undergoing Swiss Water's proprietary decaffeination process. The cherries are collected daily during harvest, de-pulped the same day, fermented in tiled tanks or plastic bags for 24-36 hours, then dried on raised beds for approximately 14 days. The coffee features flavor notes of chocolate chip oatmeal cookies and is roasted to a medium level.
The Artery Community Roasters is a social enterprise based in Ottawa, Ontario, employing people living with disabilities at living wages. They roast in small batches on a Coffee Crafters Artisan XL with a capacity of up to 10 pounds per roast, and ship within one week of roasting. Sourcing is done on a direct trade basis, maintaining one to two degrees of separation from the farmers. The Artery was named Coffee Roaster of the Month by Commonly Coffee.
