This is a limited-edition single origin coffee from Las Nubes, Matagalpa, Nicaragua. Grown by Ronald and Noelia at 1,250–1,375 meters altitude, this honey processed coffee features Red & Yellow Catuai and Ethiosar varieties. The honey process method leaves the sweet fruit mucilage on the bean during drying, creating a rich, syrupy body with vibrant complexity. The cup presents expressive flavors of papaya, molasses, rose, and juicy stone fruit, with additional notes of honey pecan, lilac, and plum. The roast is light-medium with silky, juicy body and med-low acidity.
Blind Dog Coffee was founded in 2007 by Mark Berry in Gardnerville, Nevada. Mark developed cancer as a young child that ultimately threatened his eyesight, and by age 49 he became legally blind, ending a 30 year career and prompting him to learn professional coffee roasting. The roastery uses 100% USDA Certified Organic beans with a GMO free, no additives guarantee, and sources ethically in support of fair labour practices. A portion of all proceeds goes to the Northern Nevada Children's Cancer Foundation, reflecting Mark's personal connection to childhood cancer. The business operates a roastery headquarters in Gardnerville alongside a coffee shop and café in nearby Minden.
