This coffee is from the Huehuetenango region in Guatemala. Small producers in the Highlands of San Pedro Necta and La Libertad hand-pick ripe cherries and process them at the Ixlama mill. The cherries are sorted for quality before being dried on Guardiola driers, then sorted by color using computer technology and separated by size mechanically. The result is a clean, bright cup with citrus and berry flavors and a sweet, sugary finish.
