This coffee is a Geisha 354 varietal from Colombia, produced by Luis Marcelino at Aroma Nativo farm. Grown at 1800-1950 meters altitude, it undergoes a honey lactic processing method involving controlled anaerobic fermentation in cherry, followed by pulping and fermentation in sealed barrels with lactic bacteria inoculated from a previous Geisha fermentation. The beans are sun-dried on raised beds for 11 days with 3 months of stabilization. This results in a distinctive flavor profile featuring blood orange, lime, thyme, and lemongrass notes. Suitable for both filter and espresso brewing.
