This Colombian coffee comes from La Casa farm, part of Finca La Indonesia in Nariño at 1,750 meters altitude. Produced by Yorgeny Torres, it features the Caturra variety processed using washed extended fermentation. Cherries are selected at 22 degrees Brix, then undergo 48-hour dry fermentation pre-depulping and 60-hour fermentation post-depulping before being rinsed and dried to 14% humidity. This light roast offers tasting notes of orange juice, chocolate, lemongrass, and honeydew melon with a velvety, complex body.
The Artery Community Roasters is a social enterprise based in Ottawa, Ontario, employing people living with disabilities at living wages. They roast in small batches on a Coffee Crafters Artisan XL with a capacity of up to 10 pounds per roast, and ship within one week of roasting. Sourcing is done on a direct trade basis, maintaining one to two degrees of separation from the farmers. The Artery was named Coffee Roaster of the Month by Commonly Coffee.
