This decaffeinated coffee originates from Pitalito, Huila, Colombia, produced by Adrian Lasso and Jhoan Vergara at El Diviso and Las Flores farms. The Pink Bourbon varietal undergoes a washed process followed by EA Sugarcane decaffeination using natural ethyl acetate derived from sugarcane and high mountain spring water. Cherries are harvested at 22° Brix, undergo 36-hour oxidation and 60-hour anaerobic fermentation in plastic bags, followed by thermal shock with 50°C water and 2-3 weeks of combined natural and mechanical drying. Flavor notes include orange, vanilla, cinnamon, dates, and umami. Roasted by Atmans, a Spanish specialty coffee roaster founded by Miguel Lamora.
