This coffee is cultivated alongside citrus trees in volcanic soil by small, family-owned farms in the Kintamani Highlands of Central Bali, Indonesia at 1200-1600 meters altitude. The coffee is grown by producers organized through Subak Abian, a traditional farmer organization structure. The beans are hand-picked and processed using the wet-hulled method (giling basah), a special technique that gives the raw beans a blueish tint, followed by two-step sun drying on raised beds. The varieties include Bourbon, S795, USDA 762, Typica, and Catimor. This full-bodied coffee offers flavor notes of peaty, raisin, and dark chocolate.
