This is an Anaerobic Natural coffee from Guatemala, processed at the Ayarza cherry mill in Santa Rosa. The coffee undergoes 120-hour cherry fermentation in anaerobic conditions using recycled hermetic bag liners, followed by sun drying and mechanical drying. It features flavor notes of Lime, Kiwi, and Mango. The coffee is sourced from high-altitude farms in the Ayarza region, which is defined by the Laguna de Ayarza and Laguna Azul—crater lakes formed by ancient volcano collapses.
