This coffee is produced by the AMA Estate Farm in Carmo de Minas, South of Minas, Brazil. It is a Geisha variety processed using carbonic maceration in collaboration with 2015 WBC Champion Sasa Sestic. The coffee features floral and complex characteristics with notes of orange blossom, jasmine, and blackcurrant, complemented by medium malic acidity reminiscent of apples, a creamy high body, and brown sugar sweetness.

Untold Coffee Lab

Seven co founders launched Untold Coffee Lab in Rochester, New York in April 2024, bringing together expertise from across the specialty coffee world. Among them: head roaster Danilo Lodi, a WBC Certified Judge since 2010 and coach of the 2012 and 2023 World Barista Champions; Justin Boudeman, owner of Longboard Specialty Coffee in Panama; and Francesco Bernasconi, formerly of Dalla Corte espresso machines. Untold roasts on Stronghold S7X and S9 machines, sourcing auction microlots and competition grade lots from Panama, Brazil, Colombia, and Guatemala. Roasted coffee is vacuum sealed and frozen at minus 11 degrees Fahrenheit to preserve peak freshness. The operation is built around the belief that the best coffees in the world deserve the most precise handling at every stage.
