This medium-dark roast specialty espresso is sourced from the APAS cooperative in Brazil's São Gonçalo do Sapucaí region. The coffee is a blend from 71 cooperative members, featuring local varieties including Mondo Novo and Catuai arabica cultivars. It is naturally processed, with coffee cherries dried on the patio then mechanically pulped. This post-harvest process emphasizes the nutty and chocolatey notes. The coffee scores 82 cupping points and is sustainably grown through direct and fair trade. The cooperative is converting to organic production.

Ojo de Café was founded in Bern by Debora Knieriemen and Cristian Conci, who began sourcing across Latin America in 2016. Debora, a graphic designer, shapes the brand's visual identity, while Cristian draws on a background in political science, economics, and international sales to manage sourcing and roasting. The roastery runs two machines: a Stronghold S7 Pro for competition coffees and nano lots, offering hybrid convection, conduction, and infrared precision, and a Loring Kestrel S35 for blends and single origins at scale. Origins span Latin America, with current offerings from Honduras, Panama, Costa Rica, Ecuador, Colombia, and Brazil, all directly and transparently traded. Every roast is tailored to express the terroir and the producer's work.
