This single-origin coffee from Brazil is grown at Fazenda Cachoeira da Grama in Vale da Grama, São Paulo region, at elevations between 950-1150 meters. The 411-hectare farm is owned by the Carvalho family and has about 100 hectares planted in coffee. Varieties include Catuaí and Yellow Bourbon, with trees dating back to 1956. The coffee is processed using both Natural and Pulped Natural methods. Tasting notes include cocoa, fresh fruit, with mild acidity and sweetness. The farm employs 27 full-time and about 40 seasonal workers, and operates an on-site school for employees' families.
Braden and Mary Walter launched Redhawk Coffee Roasters in Pittsburgh in 2016, starting with a mobile coffee operation before quickly establishing a permanent home. Braden brings nearly two decades of coffee industry experience to the roastery, where all production runs through a 15 kilogram Giesen roaster at their dedicated roasting facility. The approach is small batch and detail oriented, with an emphasis on sourcing coffees that reward careful roasting. What started small has grown steadily, driven by the same hands on commitment to quality that defined day one.
