About This Coffee

This single-origin Brazilian coffee comes from the Terra Nova farm in Três Pontas, owned and operated by Danilo, an Agricultural Engineer dedicated to producing high-quality specialty coffees. The coffee underwent natural fermentation in a static box for 28 hours, followed by cold air application to stop fermentation. After a two-day resting phase, hot air drying continued in the static box for an additional 8 days. The coffee features flavor notes of stone fruit, lime, and cacao with a medium roast level.

The roastery is led by Eric Scott, who built the business on specialty grade sourcing and a philosophy that supports both traditional and progressive approaches to coffee preparation. Golden State also offers consulting services, equipment supply, and water filtration guidance, extending its expertise to the broader coffee community.
