This medium roast coffee is a field blend from Buenavista Loxicha Community in Oaxaca, Mexico, grown at 1000-1700 meters elevation. The coffee is washed processed and features a layered flavor profile with notes of snickerdoodle, milk chocolate, and dried pear. The beans are sourced from small family farms in the zona Pluma region of the Sierra Madre del Sur coastal mountains and harvested using strict protocols including hand sorting, floating, de-pulping, fermenting, washing, and sun-drying to 11% moisture.
Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
