Fine Robusta Wine Fermentation from Dak Lak, Viet Nam (850+ masl). Variety TR4, fully washed processed and roasted for machine brewing. Flavors present raisin, milky sweetness and liquorice, producing a medium-bodied, syrupy cup well suited to machine/espresso extraction.

Mew Roastery opened its doors right in the middle of the pandemic in 2021, driven by a female founder who wanted to completely flip the script on Vietnamese coffee culture. Instead of sticking to the traditional dark, bitter Robusta usually drowned in condensed milk, they are on a mission to prove that Vietnam can actually produce world-class Arabica. Their roasting style is super light, lighter than almost anyone else around, specifically designed to highlight the clean, natural acidity and sweetness of the bean rather than burning it. They are totally hands-on with sourcing, maintaining direct friendships with local farmers and even heading out to the fields during harvest to geek out on processing experiments.
