This decaffeinated coffee from Brazil is processed using the Swiss Water Process, which removes 99.9% of caffeine over approximately 10 hours using water, temperature, and time. The coffee features typical Brazilian flavor characteristics with notes of nuts, caramel, and chocolate. It offers smoothness and sweetness with nutty flavors and a full, creamy mouthfeel.
Flying Horse Coffee was incorporated in August 2017, with the roastery opening in 2018 by Jack Bradshaw and Phillip Way. Jack had worked as a roaster in Melbourne; Phillip was setting up Mare Street Market in Hackney when the two connected through a coffee jobs board. The roastery operates from inside the market and now supplies four London cafés, including locations in Hackney, White City, Portobello, and Shoreditch. They source seasonally through importing partners with long standing farmer relationships. Packaging is made from sugarcane bioplastic that is fully recyclable and carbon negative in production.
