About This Coffee

This Colombian coffee is produced by the Bayter family at El Vergel Estate in Tolima and sourced through Forest Coffee. The coffee undergoes an anaerobic co-fermentation process where ripe cherries are selectively harvested, fermented anaerobically for 48 hours, then depulped and co-fermented for five days with yeast and watermelon before careful drying. The result is impressive watermelon candy sweetness, bright citrus notes, and a delightfully juicy, expressive cup. Roasted to a balanced medium profile, the coffee stays vibrant and fruit-forward while adding structure and a soft, sweet finish.
