A honey-processed coffee from a network of 20 farmers across 5 regions in southern São Paulo and Paraná states, Brazil, run by Luiz Saldanha under the Capricornio project. Grown at 450–1,200 meters altitude, the low-altitude terrain encourages a slower ripening period, producing large, complex cherries. Varietals include Yellow and Red Catuai, Red and Yellow Bourbon, Obatã, Topázio, Arara, Red Icatu, Grape (IAC 125), Acaiá, Ouro Verde, IAPAR, and Mundo Novo. Flavor notes include dry fruit, nougat, pecan, and dark chocolate.
