About This Coffee

A Colombia single origin from two farms in the Pitalito area of Huila: Finca El Diviso (1,780–1,900m), managed by Nestor Lasso and family, and Finca Las Flores (1,700–1,790m), managed by Johan Vergara and family. A blend of Tabi and Yellow Colombia varieties, 100% Arabica. The coffee undergoes a two-stage fermentation — first aerobic, then anaerobic under water — followed by a thermal shock with hot and cold water to preserve the flavor profile. Tasting notes of mandarin, peach, and vanilla.
