The variety is Mundo Maya (an F1 hybrid), processed as an anaerobic natural with 72 hours of controlled fermentation in sealed tanks and slow drying on raised beds. The cup is juicy and fruit-forward with blood orange sparkle, soft melon, and a ripple of cherry sweetness; clarity and sweetness are emphasized in the roast.
