This organic coffee comes from the Cauca department in southern Colombia, specifically from the Meseta de Popayán plateau near the city of Popayán. Grown at altitudes between 1,700 and 2,100 meters on volcanic soils, the coffee is sourced from the Asociación de Caficultores Ecológicos del Cauca (ACEC) cooperative, which supports around 500 small-scale producers. The varieties include Castillo, Caturra, and Typica, processed using the washed method. Flavor notes include caramel and papaya, with characteristic nuttiness, chocolate, and fine sweetness typical of the region.
