Celebes, also known as Sulawesi, is grown in the central mountain region of South Sulawesi, Indonesia at elevations up to 2000 meters. This single-origin coffee is processed using the traditional Indonesian wet-hulling method (Giling Basah), where parchment is removed at high moisture content. The dark roast coffee features a complex cup profile with spicy notes of allspice and smoke in the front, baker's chocolate in the middle, and maple syrup sweetness leading to a long chocolate and spice finish. Known for its heavy body and low acidity.
