About This Coffee

A single-origin whole bean coffee from Trujillo, Valle del Cauca, Colombia, at 1,752-1,941m elevation. This hybrid washed Gesha variety is produced by Rigoberto and Luis Eduardo Herrera with a complex processing method: 14 hours open fermentation, 18 hours anaerobic fermentation, followed by pulping and 24 hours aerobic fermentation. The coffee is mechanically dried at 37°C and stored at 18-19°C. Light roasted with tasting notes of hawthorn, mango, and orange blossom, featuring clean and tropical acidity.

Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
