This coffee is a single-origin offering from the Gedeb Zone in Ethiopia, produced at the Chelbasa One Washing Station at an altitude of 1950-2200 meters. It consists of Korume and Wolisho varieties, which are Ethiopian heirloom cultivars. The coffee is processed using a washed method, where cherries are de-pulped and fermented in tanks for 2-3 days before being dried on raised beds. The flavor profile is characterized by notes of lavender, tangerine, and a tea-like quality.
Little Wolf Coffee, founded in 2016 in Ipswich, MA by Chris and Melissa, is a specialty roastery and café that champions light‑to‑medium roasts to showcase a bean’s natural flavors, never over-roasting to mask them. They roast in small, intentional batches early in the week.
