This single-origin coffee comes from Cimizhu Estate in Yunnan, China, founded by Po Zha, a Lahu community leader, in 2007. Grown at 1100-1500 meters elevation, this Catimor variety is processed using the washed method and features a light roast. The coffee exhibits striking lemongrass herbal aromatics with crisp sweetness reminiscent of Asian pear, finishing with refined tannins and subtle red tea notes. A clean, medium-bodied expression highlighting Yunnan's distinctive terroir.
Founded in 2020 at the onset of the COVID 19 pandemic, Moonwake Coffee Roasters emerged from the passion of two former tech engineers, Ming Wood from Tesla and Mabel Yeung from Meta. What began as Ming's personal coffee project within Tesla's internal coffee club evolved into a full roastery operation after both founders chose to leave their tech careers to pursue coffee full time between 2023 and 2024. Moonwake represents a growing movement of technologists who discovered that coffee roasting offers greater fulfillment than their previous careers, channeling engineering precision into specialty coffee.
