This coffee is from the Huehuetenango region of Guatemala, grown and processed by women farmers from the CODECH farmers' cooperative society. It is a washed coffee composed of five varieties: Bourbon, Catimor, Caturra, Maragogype, and Pache. The beans are picked ripe, depulped, fermented for 1-2 days in tanks, rinsed in clean water, and sun-dried. The coffee has flavor notes of milk chocolate, nutty, and stone fruit.
Founded in 2014 by Matija Belković and Hannah Powlison Belković, Cogito emerged from their pioneering cafe "Cafe u Dvoristu" when Zagreb had only two establishments serving quality coffee. The addition of Matija Hrkac—three-time Croatian Barista Champion and 2012 World Barista Championship finalist—transformed this courtyard venture into Croatia's leading specialty roastery. Their approach respects Croatia's deeply social coffee culture, where leisurely consumption remains paramount, while introducing international quality standards to a market long dominated by commercial roasting.
