This coffee is sourced from the Asprotimana association in Huila, Colombia, a group of producers dedicated to improving coffee quality and grower livelihoods in Timana. Grown at an altitude between 1590 and 1750 meters, this selection consists of Castillo, Caturra, and Colombia varieties. It is processed using the washed method and roasted to a medium-light level. The cup profile features a rich body with sweet, creamy flavors complemented by subtle, bright fruity notes.
Cerberus Coffee Co. was founded in 2019 by Cody and Tina in Jacksonville, Oregon, operating a 600 square foot café and micro bakery alongside a roastery in the Applegate Valley. The queer and BIPOC owned company sources Fair Trade coffee, consistently paying above minimums with transparent farmgate pricing, and established Southern Oregon's first co roasting programme allowing others to rent facility space. Their signature Wizard Cat espresso blend directs a portion of proceeds to trans and LGBTQI+ resources including Trans Lifeline. The micro bakery runs a stone deck oven producing vegan donuts, overnight focaccia, and seasonal quiches alongside the coffee programme.
