This single-origin Colombian coffee originates from Cauca's Popayan region. The Castillo variety beans are processed using the honey processing method, which creates a balanced flavor profile. Tasting notes include lemonade brightness, peach sweetness, with prominent acidity and sweetness throughout.
Jeremy Bled founded Souvenir Coffee Co. in Berkeley, California around 2015, building a roasting operation at Bay Area CoRoasters on a pair of Loring S35 Kestrel roasters. Souvenir focuses on single origin, specialty grade coffees and small batch blends, sourcing from importers including Royal Coffee and Cafe Imports' La Bodega micro lot program, alongside direct relationships with producers in Ethiopia and other origins. The company's goals center on fostering personal connection, paying strong living wages, and operating as a progressive member of its community. Bled has plans for direct sourcing programs in Addis Ababa, Ethiopia.
