The coffee is processed using a combination of cherry fermentation and de-pulped fermentation, followed by a low and slow drying process. It is decaffeinated in-country using the Ethyl Acetate (EA) sugar process, which utilizes sugarcane molasses to remove 97% or more of the caffeine. This lot represents a collaborative effort to support Nariño producers.
