This decaffeinated coffee comes from the Caldas department in Colombia's coffee axis region at 1600-1950 meters altitude. Over 3600 producers collaborate through a cooperative focused on social and ecological coffee production. The coffee features Castillo, Colombia, and Caturra varieties, handpicked and washed with 16 to 18 hours of fermentation. Decaffeination uses the sugar cane method, where steamed beans are rinsed with a solution derived from sugar cane and vinegar to remove caffeine. The coffee offers chocolate and caramel notes with a thick, creamy mouthfeel, alongside flavors of cane sugar, hazelnut, and dried date.
