This decaf coffee is grown and processed in the Caldas region of Colombia. The berries are decaffeinated using ethyl acetate, an organic solvent derived from sugar cane, which removes 97% of the caffeine while preserving the coffee's flavor. The process involves steaming the beans to improve porosity, then soaking in a water solution with ethyl acetate, followed by repeated steaming to remove the solvent and final drying to standard moisture content. Water used in the process comes from springs of the Navado el Ruiz volcano.

They source from farms and cooperatives in Colombia, Kenya, Ethiopia, Rwanda, Brazil, and Indonesia, and visited origin partners at World of Coffee 2024 to deepen those relationships. Sustainability and eco friendly practices are central to the operation. Their range includes single origins, drip bags for travel, and a Turkish coffee line. The roastery is managed in partnership with Leto Caffe.
