About This Coffee

Geisha variety coffee from Delagua farm in Santa Marta, Colombia, processed using honey method. This coffee features mango flavor with medium red apple-like malic acidity, silky and medium-high body reminiscent of black tea, and high intensity sweetness comparable to maple syrup. The aftertaste is lingering, floral, and sweet.

Untold Coffee Lab

Seven co founders launched Untold Coffee Lab in Rochester, New York in April 2024, bringing together expertise from across the specialty coffee world. Among them: head roaster Danilo Lodi, a WBC Certified Judge since 2010 and coach of the 2012 and 2023 World Barista Champions; Justin Boudeman, owner of Longboard Specialty Coffee in Panama; and Francesco Bernasconi, formerly of Dalla Corte espresso machines. Untold roasts on Stronghold S7X and S9 machines, sourcing auction microlots and competition grade lots from Panama, Brazil, Colombia, and Guatemala. Roasted coffee is vacuum sealed and frozen at minus 11 degrees Fahrenheit to preserve peak freshness. The operation is built around the belief that the best coffees in the world deserve the most precise handling at every stage.
