This coffee comes from El Mirador, a 32-hectare farm located in the town of Pitalito in Huila, Colombia. Owned by Elkin Guzman, whose family has over 70 years of coffee experience, this lot utilizes a special Pink Champagne co-ferment processing method. The variety is Catiope, a hybrid crossing of Caturra and Ethiopia landraces. The coffee opens with Piña Colada flavors, transitions to a Strawberry Kiwi berry fusion, and finishes with Purple Haze notes.
Cat and Cloud was founded in 2016 in Santa Cruz, California by Jared Truby, Chris Baca, and Charles Jack all former barista champions and coffee competition veterans. The roastery runs a Loring S15 Falcon.
