Processed as an anaerobic natural: cherries are hand-picked, disinfected, sorted by flotation, and fermented whole in sealed stainless steel tanks for up to 10 days, followed by two-phase drying. The result is a complex, lively cup with notes of banana liqueur, blackberry, and nougat, with a light, velvety body.
