This coffee is a community lot from El Tablon de Gomez in Colombia, sourced from the areas of Pitalito Alto, Las Aradas, and La Cueva. It is fully washed after 14-20 hours of fermentation in cement tanks, followed by solar drying over 10-20 days on cement patios or raised beds under parabolic covers. The communities practice sustainable farming with intercropping of fruit trees for shade and subsistence crops. The coffee offers lively fruit acidity and smooth caramel sweetness with flavor notes of caramel, plum, blackberry, and dried apricot. This is a medium-light roast.

Ruby Coffee Roasters

Jared and Deanna Linzmeier started Ruby Coffee Roasters in late 2013, roasting their first batches from a garage in rural Portage County, Wisconsin. Jared, a former Intelligentsia apprentice who had worked in Los Angeles, Portland, and Seattle, returned home to build something rooted in the same care for sourcing and craft he had learned in those cities. Ruby is named after Jared's grandmother. The roastery is certified organic and focuses on direct trade with small scale producers and cooperatives, prioritizing long term partnerships that support economic and environmental sustainability at origin. Food & Wine named Ruby Wisconsin's best roaster in both 2018 and 2019, and the company has also earned Good Food Awards and a Wisconsin Innovation Award. From that garage to a purpose built facility in Nelsonville, the ethos has stayed the same: thoughtful sourcing, careful roasting, and a quiet confidence in letting the coffee do the talking.
