This coffee is from El Mirador, a 31-hectare farm in El Portal, Huila, Colombia, owned by Elkin Guzman. The coffee is Catiope variety, a cross between Caturra and Lineas Etiopes. It undergoes a Strawberry Natural co-fermentation process where cherries are disinfected with citric acid, then co-fermented with a caramelized strawberry mixture and brown sugar as an energy source. The process includes an initial 80-hour sealed fermentation followed by 96-hour co-fermentation with the strawberry mother culture, totaling 176 hours of fermentation. The coffee is then dried in thin layers, turned every 3 hours until reaching 10.5-11% moisture content.
