This coffee is from Finca el Placer in San Augustin, Huila, Colombia, produced by Karen Burbano, an 18-year-old fourth-generation coffee grower. The coffee is Pink Bourbon variety grown on a small farm of 3000 trees at higher altitude. The processing involves wet fermentation where cherries are collected at peak ripeness every 15 days, left to ferment overnight in a hopper, then depulped. The seeds are covered with water and combined with subsequent collections over 3-4 days. After collection is complete, the mass ferments for 48 hours covered in water, then rinsed and dried in a solar dryer for 18-20 days on raised beds in shade. The flavor profile features rose hips, red berries, and aromatic notes.
