A microlot Red Bourbon from Finca Las Flores in Acevedo, Huila, Colombia, produced by Jhoan Manuel Vergara Ayure. The farm, founded in the 1990s, also grows Pink Bourbon, Tabi, Java, and Maracaturra varieties. This washed coffee was hand-picked at optimal ripeness (brix values 22–26°), fermented in plastic bags for 12 hours then in tanks for 24 hours, and dried in hermetically sealed stainless steel dehumidifiers to 11% moisture. The cup profile is sweet and juicy with a velvety body and notes of honey, elderflower, and peach.
