Colombia Finca Montreal is a washed coffee from Duverney Cifuentes' farm in Planadas, Tolima, at 2,050 meters altitude. The coffee is made from Bourbon Azuri variety and features a unique sequential anaerobic fermentation: 30 hours in whole cherry followed by 30 hours wet fermentation after pulping, then dried 20-25 days under parabolic shade. The cup presents balanced, rounded, and syrupy characteristics with flavor notes of brown sugar, huckleberry, black cherry, passionfruit, and lime.
