About This Coffee

A Colombian SL28 variety from El Renacer farm, run by Elmer Restrepo in Chinchiná, Caldas, at 1400–1600 masl. The coffee undergoes a washed co-fermentation with ginger: microbes (Lactobacillus and Saccharomyces) are cultivated with ginger and panela, combined with freshly picked cherries for 72 hours, then pulped and slowly dried. The result is a bright, spicy-citrusy coffee with notes of mandarin, ginger, and lemongrass, with high sweetness and vivid citrusy character. Suitable for pour-over, espresso, or moka pot brewing.
