This coffee is a Red & Yellow Caturra variety from El Vergel Estate in Fresno, Tolima, Colombia. The cherries are selected at peak ripeness and undergo a 48-60 hour anaerobic fermentation followed by natural processing. The beans are initially dried on raised beds in a Marquesina until reaching 30% moisture, then finished with mechanical drying at temperatures below 45°C. After a 45-day stabilization period in GrainPro bags, the coffee exhibits a rich and complex flavor profile with notes of chocolate, plum, guava, red fruits, citric acid, and tangerine.
