This coffee is a single origin from Huila, Colombia, grown at 1600-2000 meters altitude. It is processed using the double fermentation method and made from Java variety coffee cherries. The light roast showcases tasting notes of cherry, mulberry, and honey. It is sold in 12oz compostable and resealable bags.
Achilles Coffee Roasters was founded in 2015 by Chad Bell in San Diego, California, named after his son. What started as a modest outdoor coffee cart in the Gaslamp Quarter grew within a year into a leased space in Cortez Hill, and the business now operates five café locations across San Diego County. All coffee is roasted in small batches locally, using beans that carry Organic, Fair Trade, and Rainforest Alliance certifications alongside direct trade relationships where possible. The roastery maintains 12 rotating single origin selections sourced from around the globe, with an emphasis on precision brewing methods including weighed espresso shots.
