It features the Pink Bourbon variety, washed processed with an innovative technique involving fermentation in mosto (a culture from previous fermentations) and thermal shock treatment. The flavor profile offers bright fruit notes of kumquat, tangerine, lime, honeycomb sweetness, Fruit Loops cereal characteristics, and spiced pear. Jose is a member of Los Guacharos, a collective of farmers transitioning to biodynamic agriculture.
