This single varietal Pink Bourbon coffee is from Jairo Arcila, a third-generation coffee grower from Quindio, Colombia. The coffee is grown at 1500 meters altitude. It underwent a honey process with co-fermentation using dried lychee and wine yeast, followed by a dry anaerobic fermentation for 72 hours. After fermentation, the coffee was slowly dried on raised beds below 35 degrees Celsius. The coffee scored 93 on Coffee Review, described as having red berry and crisp chocolate notes with a bittersweet floral throughline.
