About This Coffee

This is a rare Java variety coffee from El Vergel Estate in Tolima, Colombia, grown facing the snowy mountain "El Ruiz." Planted in 2016 with 9,200 plants, this coffee is part of a unique micro-lot produced by Forest Estate under the direction of Elias and Shady Bayter, with guidance from expert Miguel Jimenez. The coffee undergoes natural anaerobic fermentation with Koji processing, resulting in a distinctive profile with floral, caramel, and tropical fruit notes accompanied by black tea and dark chocolate characteristics.

Scarab is a recently launched roastery and cafe in Dubai's Al Qusais Industrial Area, named after the ancient Egyptian beetle symbolizing transformation and rebirth. The operation runs on a fully convection based automatic roasting system designed for low energy consumption and fast, consistent results. Sourcing focuses on high scoring, traceable single origins from Ethiopia, Colombia, Brazil, and other producing regions, with competition grade and exclusive micro lots available alongside the core range. Scarab also produces its own NiWares ceramics, including dual lipped cups engineered to change the coffee's point of impact on the palate. Mariam Erin used the NiWares cups during her winning 2024 National Brewers Cup routine. The warehouse space runs more like a workshop than a traditional cafe, with fair pricing and an emphasis on openness.
