This competition lot is produced by Jose Lasso from his farm El Diviso in Pitalito, Huila, Colombia at 1850 meters elevation. The coffee features Sudan Rume, an heirloom Arabica variety originally discovered in South Sudan, prized for its disease resistance and adaptability. The processing method involves selective harvesting during rain-free days, followed by a complex sequence: 12-hour initial anaerobic fermentation at 16-18°C, 36 hours of controlled oxidation at 36°C, a second 36-hour anaerobic fermentation in a Biomaster fermenter, 24-hour submersion in water and mossto mixture with leachate recirculation, and a 15-minute thermal shock at 60°C. Drying is completed using an advanced stainless steel dehumidifier with temperature control. The cup profile features tangerine, berry candy, and mint notes.
